For goat cheese balls:
- 1 small log of herbed goat cheese
- 1/2 cup flour
- 1 egg
- 1/2 cup breadcrumbs
- 3 tablespoons olive oil
Ingredients for Salad:
- 4-5 cups of mixed greens
- 10 strawberries, sliced
- 1/4 cup crushed pecans
- 1/4 cup dried figs, mangos or pears, chopped
- 1/3 cup Carlas Famous Balsamic Dressing
Directions for Fried: Goat Cheese:
Cut the cheese into 8 even slices. Roll into small balls then press lightly with the palm of your hand to form a small “patty”. Coat each patty in flour on each side, brush off excess, then egg (brush off excess) then cover each side with bread crumbs. Make sure you cannot see any white. Heat olive oil on medium-high heat. Saute on each side until golden brown. Set on paper towels.
Directions for Salad:
Combine all ingredients, toss with dressing. Place Fried Goat Cheese on top.
