Crispy Sweet Pecan Granola

Crispy Sweet Pecan Granola:
Vegetable oil spray
3 cups old fashioned oats (not quick- cooking)
1 cup pecan halves
1 cup almonds
2 tsp. ground cinnamon
1/4 tsp salt
1/2 cup light brown sugar
2 tblsp. canola oil
1 tblsp vanilla
heat oven to 300. In a large bowl mix the oats, pecans, almonds , cinnamon and salt. In a small saucepan combine b.sugar and 1/4 cup water. Bring to a
simmer  stirring until sugar is melted. Stir in oil and vanilla. Remove from heat and pour over oat mixture, sitr w/spoon until well mixed.
Divide mixture evenly among 2 cookie sheets and spread in an even layer. Bake for 15 min stir and then switch the positions of the pans and bake until oats
are golden brown and nuts look well toasted – usually another 10-15 min. The oats may feel soft but once cooled they crisp up. Once cooled add any combination
of dried fruit, such as chopped apricots, raisins, cranberries, cherries, etc
