3 cups old fashioned oats
(not quick- cooking)
1 cup pecan halves
1 cup almonds
2 tsp ground cinnamon
1/4 tsp salt
1/2 cup light brown sugar
2 tbsp canola oil
1 tbsp vanilla

Stir in oil and vanilla. Remove from heat and pour over oat mixture. Stir with spoon until well mixed. Divide mixture evenly among two cookie sheets and spread in an even layer. Bake for 15 minutes. Stir and switch the positions of the pans and bake until oats are golden brown and nuts look well toasted about 10-15 minutes. The oats may feel soft, but once they cooled, they crisp up. Once cooled add dried fruit such as chopped raisans, cherries, mango, cranberries, apricots.
