Michele T’s Jewish Apple Cake

4-5 apples peeled & cut into chunks

4 tbsp sugar

2 tsp cinnamon

4 eggs

2 cups sugar

1 cup oil

3 cups flour

3 tsp baking powder

1/2 tsp salt

1/2 tsp cup oj

2 tsp vanilla

Grease & flour 9-10″ tube pan.  Mix apples with 4 tbsp sugar and 2 tsp cinnamon. Set aside.  Beat eggs, add sugar & oil then add dry ingredients.  Add oj and vanilla at end.  Pour 1/2 batter into pan, add some apples and then alternate batter w/ apples with apples ending on top.  Bake at 350 for 1-2 hrs or until done.  Test with toothpick.
