Mom Mom Irene’s Kmish Bread (Biscotti)

(Can be made with cinnamon and nuts , fruit or chocolate)

About 4-5 metal ice  cube trays

2 cookie sheets

2 sticks margarine

2 cups sugar

3-5 cups flour

1.5 tsp baking soda

1/4 tsp salt

4 eggs

2 tsp vanilla extract

2 tsp almond extract

2 tsp cocoa

1 cup slivered (blanched) almonds

Cream sugar and margarine.  Add eggs, one at a time.  Pour flour in slowly, add ingredients.  Add vanilla, almond extract and nuts.  Take out about 5 tbsp of the dough and mix 5 tbsp of cocoa and set aside ). Spray PAM in ice-cube trays. Make long rolls by hand and place each roll in tray. Put 5 tbsp mixed with cocoa on top of long roll evenly.  Put in oven 350 degrees for 35-40 minute.  Cool.  Cut into slices on the diagonal.   Turn on side on cookie sheets and toast 10-15 minutes.
