Poached Salmon

Filet of salmon skin on bottom preferably off (lb) 4 people
1 bay leaf
1 tbsp kosher salt
Ground pepper
2 tbsp chopped dill
1 tsp thyme
1.5 clove chopped garlic
1/2 cup of chicken broth
1/2 sherry wine or white wine

Combine wine and broth. Put salmon in microwave safe dish. Put seasonings on top of fish. Make sure to take some of liquid and put
on the top of the fish. Cover fish but leave some room in cover to
vent. Microwave for 5 minutes or until fish is just done. Check fish
for doneness about 4 minutes.
Drain liquid and plate fish. Let come to room temperature or serve cold.

Mustard sauce
churchee’s mustard
Chopped garlic

Combine churchee’s mustard and mayonaise. (1/2 and 1/2). Combine dill, garlic, lemon with mustard and mayonaise
