Tilapia Dijonaise

Servings: 4

Ingredients:

1 1/2 pounds of tilapia filet

1/2 cup dijon mustard

1/3 cup olive oil

1/3 cup white wine

3 tablespoons fresh lemon juice

2 tablespoons fresh basil, chopped

1 tablespoon fresh chives, chopped

1 tablespoon minced shallots

Directions:

Rinse fillets, pat dry. Arrange in a glass baking dish. Combine remaining ingredients and pour over filets, turning to coat. Cover and refrigerate for 1-2 hours. Preheat broiler. Place filets on a lightly oiled broiler pan and broil fish  until it easily flakes with a fork, approx. 5-7 minutes. Serve immediately.
