Apple Stuffed Porkchops

1/2 cup current jelly
2 tbsp orange juice
3/4 cup herb-seasoned stuffing mix
1/3 cup finely chopped, unpeeled apple
1/4 cup finely chopped onion
2 tbsp raisins, coarsely chopped
1/4 cup of orange juice
1 tbsp butter, melted
1 tbsp grated orange rind
1/2 tsp salt
1/4 tsp cinnamon
4 center-cut pork chops cut 1 inch thick

In small saucepan, combine jelly and 2 tbsp orange juice. Cook over low heat until jelly is melted. Stir until smooth. Set aside.

In mixing bowl, combine stuffing mix, apple onion, raisans, 1/4 cup orange juice, butter orange rind, salt cinnamon; mix well. Cut a pocket in each pork chop. Spoon 1/4 of mixture into each pork chop pocket. Secure opening with wooden toothpicks, if necessary.

Brush orange juice and jelly onto top of pork chop. Put in greased baking casserole. Bake at 350 for 45-60 minutes or until tender. Spoon orange juice and current jelly mixture over pork chops.
