Mom Mom’s Chicken canelloni with Cheese Sauce

2 tbsp butter

2 tbsp olive oil

1 garlic clove

1/4  tsp thyme

1/2 tsp salt

2 tbsp evap milk or cream

1 small onion finely chopped

2-3 3/4 cup diced chicken

1 package lasagna noodles

Spread cooked lasagna noodles on paper towels quickly and dab water out.  In skillet, saute onion in butter and garlic until brown.  Remove from heat.  Combine chicken and onion.  Beat egg, evaporated milk, thyme and salt and combine with chicken mixture.  Cut noodles 3-4″.  Fill it with chicken mixture and roll in tubular form.  Place closely in baking pan. 

Cheese Sauce

3 tbsp butter

3 tbsp flour

1.5 cups chicken broth

3/4 cup heavy cream or evap milk

salt and pepper to taste.

1 cup grated cheese

Melt butter and thicken with flour.  Add broth gradually.  Stir in grated cheese and cream.  Salt and pepper to taste.  Cook until very smooth.  Remove from heat

Pour cheese sauce over canneloni and bake 300 degree oven for 20 minutes, until sauce is browned.
