Fred’s Minestrone with Tortellini

1/3 cup olive oil
Large yellow onion cut in rings
4 lrg carrots cut thick
1 fennel bulb chopped
2 leg potatoes peeled and diced
1 org green pepper 1/2″ squares
3 medium zucchini sliced
1.5 cups of green beans diag cut
5 cups beef stock (beef bones that are baked for 2hrs, add brisket gravy and 1 cup water and bake for 2 hrs)
2 cups of water
3 cups tomato stock ( 4 lbs blanche for 3 min plum tomatoes cored
1 clove of garlic in tomato stock simmer run through processor)

Add tortellini
