Freds Tortilla Soup with Tomatoes and Smoked Turkey with Five Garnishs

Serves 6

1.5 cups zucchini (2 medium)

1/2 tbsp olive oil

Large onion chopped (1.5 cups)

1 tbsp and 2 tsp garlic

28 oz can italian plum tomatoes (chopped)

2 1/4 tsp oregano

1.5 tsp cummin (spice)

1/4 crushed red pepper

6 cups vegetable broth

1 cup sliced carrots (julliene)

1/2 cup red pepper cubed (1 med size)

1/2 cup yellow pepper cubed (1 med size)

1/2 cup celery cubed ( 3 stalks)

1.5 cup thinly sliced zucchini (2 small zucchini)

3/4 pund of thinly sliced turkey breast in match size strips

Salt and pepper

Heat oil in heavy dutch oven or soup pot.  Saute onion until done.  Add tbsp garlic, saute onion.  Stir in tomatoes, oregano, cummin and dried red pepper.  Simmer 10 minutes.  Puree mixture.  Pour vegetable broth into dutch oven, heat and bring to a simmer.  Add veggies, carrots , pepper, celery and zucchini.  Cook 10 minutes.  Pour in tomatoe mixture and add thinly sliced turkey.  Add pepper. Simmer.  Serve with 5 different garnishs below.

Five Garnishs

1.  7 six inch tortilla strips- slice into 1/4 strips- Preheat oven to 350.  Line baking sheet with foil.  Spray with Pam.  Throw tortilla strips in pan.  Bake for 18 minutes. 

2.  Combine:  1/2 cup cilantro, 1/2 cup lemon peel-grated and 2 tbsp of minced garlic

3.  1 cup monterey jack cheese

4.  shelled sunflower seeds

5.  Lemon wedges
