Mom Mom Irene’s Knishes


This is for 95-100 knishes

Cut with side of hand-2 1/2 inches each knish

Liver= 1.75 pound 4-5 potatoes

Cheese= 1 lb farmers cheese

Potatoe= 8-10 potatoes boiled and mashed

4 eggs separated.  Yolks to be used for brushing


Pinch of salt

1 cup of oil

2 tbsp vinegar

2 cups hot tap water

4 tsp baking powder

5-6 cups flour

Add flour as you need it until dough doesnt stick

Use hands to knead dough

Set aside in warm place for 45 minutes

Put a drop of oil in bowl

Do not refrigerate or freeze

Oil pan 350 40 -45 minutes

Rice Knishes

Make the rice batter thick

1 pound of boiled cooked Carolina rice washed good, strained.

Add 2 cups of milk

Add 2 tbsp sugar


Add 1/2 stick of margarine

Let cool

Add 1 beaten egg

Let cool

Add 1 beaten egg

Let cool

Add 2 beaten egg

Put in refrigerator for 1-2 hours or overnight

Cheese- makes about 45 knishes

1 pound Pot?? cheese

1/2 lb cream  cheese

2 eggs

add sugar to make sweet

One large onion minced and fried golden not brown

Put onions and oil from pan into bowl and mix everything

Thicken everything with flour- make thick

Potatoe Knishes

Boil potatoes, drain and mash good

beat two eggs and add to potatoes

add salt and pepper
